Crayfish are crustaceans belonging to one of the following three families: Astacidae, Cambaridae, or Parastacidae. All of them are found in freshwater, where they have colonized a wide variety of habitats, ranging from marshes to torrents. Some species only live in strong currents. Throughout history, crayfish have been fished and consumed by humans.
